Stewed Prunes with Yoghurt and Honey

Prunes are a misunderstood food and could be forgiven for suffering an identity crisis. Indeed they arenít the sexiest or most glamorous of fruits and is often associated with constipation relief or given to the elderly or infirmed.

Itís time this misconception is put to bed, as itís one of the most delicious super-foods around. The humble prune is packed full of healthy, nutritious goodness, being high in antioxidants, fibre and helps lower cholesterol and yes ... it does help keep you regular!

The combination of spices and orange I used in this recipe helps fool the brain into believing the prunes have been soaked in liquor. Of course you can add alcohol to taste, however I wanted to keep this dessert completely low in fat and calories.

Stewed Prunes with Yoghurt and Honey

This delectable, sweet yet simple dessert will certainly lift the status of the prune to star appeal. Family and friends will love it.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 2 servings

1 Cup Unsweetened Pitted Prunes
1 Teaspoon Ground Cinnamon
ľ Teaspoon Ground Nutmeg
ľ Teaspoon Ground Ginger
2 Tablespoons Honey
Juice of Ĺ Orange
1 Teaspoon Orange Rind
1 Cup Water
Ricotta, Yoghurt and Orange Zest to decorate

Place all ingredients (prunes, cinnamon, nutmeg, ginger, honey, orange juice, orange zest and water) into a sauce-pan.

Place all ingredients into a sauce-pan and bring to a boil

Over a mid heat bring liquid to a boil and simmer for approximately 20-30 minutes or until all liquid has been reduced to a thick syrup. Leave to cool.

Top with Low-Fat All Natural Yoghurt and a dollop of low-fat ricotta. Sprinkle with orange zest. Can be served warm or cold.

Serve the Prunes with low-fat natural yoghurt and ricotta with a sprinkle of orange zest. Enjoy this dessert either warm or cold
