Sticky Date Cheesecake

New York style cheesecake with chopped dates mixed in. This cheesecake is also sweetened with brown sugar instead of white sugar, which gives it a distinctive flavor

Preparation Time: 30 minutes
Cooking Time: 60 minutes
Makes: 12 servings

115g marie biscuits
200g pitted medjool dates
50g melted butter
750g cream cheese
100g (1/2 cup) brown sugar sugar
1 tsp vanilla extract
3 eggs


Preheat oven to 170C.
To make the crust, put the biscuits into food processor and blend into fine crumbs.

Add melted butter then pulse again until well combined.

Press the biscuit mixture into the bottom of a greased springform pan.

To make the filling, add cream cheese, brown sugar and vanilla into a mixing bowl. Whip until smooth, around 5 minutes.
Add eggs one at a time, beating briefly between each until the mixture is smooth and well combined.

Fold in the chopped dates. Pour the mixture into the prepared springform pan.

Bake the cheesecake for 1 hour.

Let cool and then refrigerate overnight.
Cut into slices and serve.

oops, my bad! i used 200g pitted medjool dates

I think you missed out the dates from the ingredients list.
