Stir Fry Vegetables with Egg

For me this is a nice alternative to having meat. I also like to triple the ingredients and serve it in a big bowl in the middle of the table as a serve your self thing when I cook a few dishes.



Cooked vegetables
A simple vegetarian dish for any time


Preparation Time: 5 minutes
Cooking Time: 5-10 minutes
Makes: Serves 1 as a main meal

Ingredients
1/2 a small yellow stone carrot
1/2 a small orange carrot
1/2 cup of cauliflower
1 cup of green beans
2 eggs
4 tablespoons of soy sauce
2 tablespoons of honey
1 teaspoon of minced garlic

Method
Add soy sauce, honey and garlic to a bowl and whisk well with a fork to combine.
Peel and chop the carrots.
Cut up one cup of cauliflower.
Bring some water to the boil in a medium sauce pan and cook vegetables for 5 minutes.

Cook vegetables for just 5 minutes


Turn off vegetables, drain and set aside.
Heat a fry pan on high.
Add the eggs to a bowl and whisk.
Add eggs to the fry pan and allow to cook for approximately one minute.

Start to fold the egg to build it up high and make it nice and thick.

Flip the egg and cook another 1-2 minutes until cooked through.
Take egg out of the fry pan and set aside.
Turn on a wok or fry pan on and heat on high.
Add vegetables to your wok or fry pan and add the honey soy marinade and toss well.
Turn heat down to low.
Cut egg into strips.

Then cut again to make squares.

Add egg to the fry pan and toss lightly.

Take off heat and serve immediately.
