Stirfry Noodles in Supreme Soy Sauce

This tasty noodle dish is a popular dish in Hong Kong served any time of day.



Stirfry Noodles
Supreme Soy Sauce Stirfry Noodles.


Preparation Time: 15 minutes
Cooking Time: 5 minutes
Makes: 4 servings

Ingredients
Fresh or dry egg noodles
Sliced Onion
Beansprouts
Oil
Shallots - optional
Chives - optional

Seasoning
Sweet soy sauce
Dark soy sauce
Sugar
Sesame oil - optional

Method
Put a pot of water on the boil (this is used to cook the egg noodles in).
Prepare the other ingredients while the water is boiling. Eg. slice onions, shallot, chives etc
Once water is boiling, add in egg noodles and cook til al dente
Drain noodles and rinse under cold water. Set aside.
Heat about 1 teaspoon of oil in wok.
Add in sliced onions and stirfry til translucent.
Add in noodles and stirfry til heated through and slighty dry.
Add all seasoning and taste test. Add more soy sauce if required. You may add sesame oil at this point for a special touch.
Lastly add beansprouts and shallots/chives at the same time. These cook quite quickly.
Dish up and serve noodles garnished with sesame seeds if desired.
