Ingredients 250 g strawberries, roughly chopped
1 pear, peeled, cored and chopped roughly
2 tbs sugar
2 tbs water
1 1/2 cups plain flour
1 cup SR flour
1 tsp bicarb soda
1/2 cup milk
1/3 cup vegetable oil
1/2 cup honey
2 eggs, lightly beaten
2 tsp vanilla extract
Place the strawberries, pear, sugar and water in a saucepan, cover and heat over high heat until boiling. Remove the cover and reduce the heat to medium low. Let simmer for 15 minutes. Set aside to cool for 20 minutes.
Blend the strawberry mixture until smooth, then set aside until cooled completely.
Preheat oven to 180C. Grease and line a loaf pan.
Place the flours and bicarb soda into a large bowl. Add the remaining ingredients (including the strawberry mixture) and stir well to combine.
Pour mixture into your prepared pan and bake for 1 hour and 10 minutes or until a skewer comes out clean.
Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
