Strawberry & Apricot Cream Cheese Tart

A light, simple and flavoursome way to spice up your fresh Summer fruits! These tarts are easy to make and fail proof -whether you are preparing for tea, snack or dessert.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 12 servings

3 sheets shortcrust pastry, thawed
250g cream cheese
250g fresh strawberries (or fresh fruit of choice)
1 tbsp lemon juice
30g strawberry jelly crystals
30ml hot water

Preheat oven to 200C, lightly grease 12 tart pans.

Cut the pastry into quarters and press into the tart pans. Remove the extra pastry.

Using a fork, gently press holes into the pastry. Refrigerate for 15 minutes or until firm.

Bake the pastry for 5-8 minutes or until golden and puff.

Remove from the oven and allow to rest.

Meanwhile wash and hull the strawberries. (Or if using other fruit, cut into smaller pieces)

In a large bowl, beat the cream cheese until smooth.

Add in the lemon juice and beat to combine.

Melt the jelly crystals with hot water, stir until completely dissolved.

Spoon the cream cheese into the prepared pastry.

Arrange the strawberries or fresh fruit on top.

Distribute a spoonful of the dissolved jelly over the tarts and refrigerate until set.
