This jam like spread is awesome with fruit toast. Well at least that's how I like it. Made from chia seeds and strawberries it's a little bit different to jam, and not quite as thick but it tastes so good.
Strawberry Chia spread served on fruit toast
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: Half a jar
Ingredients 1 cup of strawberries
1/2 cup of water
4 tablespoons of chia seeds
4 tablespoons of honey
Add all ingredients to a small saucepan and bring to the boil.

Turn heat down to low and simmer stirring continuously as the seeds will burn on the bottom of the pan.
Spread is starting to reduce
Spread is ready when the mixture reduces by half
Take off the stove and pour into a glass measuring jug. This makes it easy to pour the hot spread into your jar.
Pour mixture into a sterilised jar and allow to cool for an hour before placing in the fridge.
When cool leave in the fridge overnight before using.
