Stuffed Beef Floss Pancake

A popular Asian street snack of pan-fried pancake with beef floss fillings.

Preparation Time: 2 hours
Cooking Time: 30 minutes
Makes: 10 pancakes

300g bread flour
1/4 tsp salt
125ml milk
60ml warm water
1 tbsp sugar
1 tsp instant yeast
beef floss, for fillings

Mix warm water, sugar and yeast in a stand mixer bowl. Set aside until frothy.

Add in flour, salt and milk. Knead until the dough is elastic, about 20 minutes on medium speed.

Cover and leave to proof in a warm room temperature until doubled in size.

Divide the dough into 10 equal portions. Rest for 15 minutes.

Roll out the dough, spoon some beef floss on the center, seal and pinch edges to enclose. Shape into a ball and rest for 10 minutes.

Heat a non-stick pan on low heat, fry pancake in batches. Using a spatula to flatten them while frying. Fry until both sides turned brown.

Transfer fried pancake to a wire rack to cool down slightly. Serve warm.
