Stuffed Eggplants in Garlic Oyster Sauce

This is a hearty and fragrant dish that my mum used to make. She used to pan fry them as we didn't have an oven, but these are baked. Every time I make these I can't wait until they're finally ready to eat.



Preparation Time: 10 minutes
Cooking Time: 15-20 minutes
Makes: 4 servings

Ingredients
2-3 eggplants, 150-200g each
250g organic pork or beef mince
1 tbsp oyster sauce
1 tbsp seafood soy sauce
1 tbsp corn starch
1 tbsp sugar
1 tsp sesame oil
1 tbsp extra light olive oil
Extra for garlic oyster sauce:
2-3 garlic cloves, finely chopped
1 tbsp oyster sauce
1 tbsp seafood soy sauce
1 tbsp corn starch
1 tbsp sugar
half cup water

Method

Preheat oven to 180 C.

Combine mince with 1 tbsp oyster sauce, 1 tbsp seafood soy sauce, 1 tbsp corn starch, 1 tbsp sugar and 1 tsp sesame oil in a large bowl, mix and stir to form a sticky mixture. Set aside.

Trim top of eggplants, halve lengthwise, hollow out half inside to make a boat-shaped shell, then brush some corn starch inside.



Divide and stuff marinated mixture among eggplant shells.



Heat 1 tbsp extra light olive oil in a frypan over medium-high heat, place stuffed eggplants to pan, with stuffed side facing down, pan fry for 1 minute to firm.



Change to another side, pan fry for 1 minute.



Transfer to a baking tray, bake in 180 C for 15 minutes.



Prepare garlic oyster sauce. Combine 1 tbsp oyster sauce, 1 tbsp seafood soy sauce, 1 tbsp corn starch, 1 tbsp sugar and half cup water in a bowl, stir well.

Pour sauce mixture to a saucepan and bring to boil. Stir and boil until liquid reduces to half, turn off heat.



Transfer baked eggplants to serving plates, pour garlic oyster sauce on top. They can be served as a starter, or with veggies, steamed rice as your main course.
