Sugared spicy nuts

Don't pay a small fortune at the supermarket for these little morsels, it's so easy to make your own!



Sugared spicy nuts

Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: A small bowl of nibblies for a party

Ingredients
125g cashews
125g peanuts
1 egg white
1/3 cup sugar
1/2 teaspoon cinnamon
60g butter

Method
Place nuts on a flat tray in a moderate oven for 5 - 10 minutes, or until lightly roasted.
Place in a 28cm x 18cm Lamington tin.
Beat egg white until soft peaks form, gradually beat in sugar and cinnamon.
Stir in cooled melted butter.
Pour mixture over nuts and mix well.
Bake in a moderately slow oven for 30 minutes, stirring every 10 minutes.
Cool and store in an airtight container.

Note: you can use whichever nut combination you like. I often use blanched almonds and pecans and they're great together!
