Sun-dried Tomato, Feta & Pine Nut Couscous Salad

Quick, healthy and easy, prepare it the night before and pack it up ready to bring to work, school or on a trip.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
˝ cup sun-dried- tomatoes
1 cup vegetable stock
1 cup uncooked couscous
˝ cup feta, crumbled
1/2 tbsp dried oregano
Juice of 1 medium lemon
Salt & pepper to season
Pine nuts to serve



Method
In a saucepan bring the stock to a boil.



Stir in the couscous and remove from heat.



Cover the saucepan and let it stand for 5 minutes or until the stock has been absorbed.



Add the lemon juice into the couscous.



Add the dried oregano, salt and pepper to season. Combine well.



Drain and cut tomatoes into strips. Gently stir in the tomatoes and feta.



Serve warm or cold, topped with pine nuts.
