Sun Dried Tomato Pesto

This has the texture of traditional pesto but that's where the similarities end. This is a delicious quick recipe which is lovely as a cold or hot pasta dish.

Sun-dried Tomato Pesto.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 5 servings

300g of sun-dried tomatoes
1/2 cup roasted unsalted cashews
4 cloves or garlic
1 bunch or parsley
1 cup or grated Parmesan
500g raw pasta


Grate the Parmesan and add to a large bowl.

Pick the parsley leaves off the stems and add to the bowl.

Blend in a Bowl.

Add the remaining ingredients including the oil the tomatoes are in and blend with a hand blender or food processor until the mix is chunky.

You Want it Chunky!

Bring a pot of water to the boil and cook your pasta.

Drain your pasta and return to the pot.

Add your chunky tomato pesto and mix until combined.

Made with Orecchiette.

Serve hot with some garlic bread and a glass of red wine.

Devoured with a Merlot.

This is lovely cold for lunch the next day with some avocado tossed through.
