This super green quinoa salad with fresh basil is light, refreshing, healthy and super delicious. It is filled with nutritious ingredients providing you with plenty of iron, fiber, fats, protein and minerals. Enjoy as a side dish and split it into two or eat as a main meal and keep it for yourself - once you try it, you will want to.
Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 2 side servings
Ingredients
3 cups of spinach and rocket mix
1 cup fresh basil leaves
2 tablespoons extra virgin olive oil
Juice of one fresh lemon
1 cup cooked quinoa
1/2 avocado
1 packed cup of spring greens or sprouts (I used watercress)
1/4 cup shelled lightly chopped pistachios (or almonds)
1/2 red onion
1 tbsp of nigella seeds (optional)
1/4 teaspoon pink salt
1/2 small cucumber
Generous pinch of fresh pepper
Method
Put the quinoa on to cook.
In a large bowl toss together the torn spinach, fresh basil, olive oil, lemon juice, cubed cucumber, red onion, avocado and salt and pepper. Toss together for about 3-5 minutes. Set aside.
Once the quinoa is cooked and cooled add it to the salad with the chopped pistachios.
Finish with a final flourish of nigella seeds and enjoy on its own or as a side dish to
patties as I have here.
NOTE: The nigella seeds are not essential I just think they look beautiful!
