Super Spinach Hummus

A healthier spin on an already beneficial snack, spinach hummus combines chickpeas, garlic and spinach to make a superfood hummus that tastes just as great as it's counterpart to make your next hummus brimming with health-giving vitamin C, iron, antioxidants, beta-carotene and vitamin K. Served with chopped vegetables, it can make a great addition to any diet.

Apart from the health benefits, spinach hummus makes a great tasting snack which is quick to make and will last up to two days in the fridge in a sealed container, so you can make it ahead to enjoy later on.

The flavour of hummus can vary greatly depending on the quantities of garlic, lemon juice, cumin and salt used. This recipe is fairly strong in garlic, so if you prefer a milder flavour, use less garlic, adding a little at a time until you get the taste right for your preference.

Preparation Time: 10 minutes
Cooking Time: 0 minutes
Makes: 8 servings

1 can chickpeas, drained
1/2 cup fresh spinach, chopped
1/4 cup tahini
2 tablespoons garlic
3 tablespoons lemon juice
2 tablespoons olive oil
1/4 teaspoon cumin
1/4 teaspoon salt

Put drained chickpeas into a food processor.

Add garlic, cumin, spinach and olive oil and blend.

Next add lemon and salt and mix to combine.

Serve on a platter alongside cut up vegetables and crackers to dip, or place in and airtight container and refrigerate for up to 2 days.
