Sweet And Spicy Carrot Dip

This is an incredibly quick and easy way of using excess carrots you may have loitering at the bottom of your fridge. Itís sustainable cooking at its best, not to mention how it will present as a vibrant and healthy addition on your table. Serve with home-made Sesame Crackers to really taste the sweetness of the carrots, which compliments the selection of spices used, and the nuttiness of the tahini.

This dip is a good example of how the addition of spices can bring so much flavour to a simple vegetable dish. Can be used as part of a tapas selection or as a sandwich spread.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 250ml or 1 Cup

Ingredients
3 Carrots
1 Teaspoon Cinnamon
1 Teaspoon Fennel Seeds
1 Teaspoon Black Pepper
1 Teaspoon Tahini
1 Teaspoon Rice Malt Syrup
Ĺ Teaspoon Chilli
Garnish with Coriander Leaves, Pine Nuts, and Raisins

Method
Peel and dice carrots, and place in a small saucepan of water.

Add the fennel seeds, pepper and cinnamon to the carrots and bring water to the boil.

Reduce heat and simmer until all the liquid has evaporated.

Spoon cooked carrots into a serving bowl and add the tahini, rice malt syrup, and chilli.

Cook the carrots and spices until tender then add the tahini, chilli and rice malt syrup and process until smooth.


Process the carrots with a hand blender (or in a food processor).

Refrigerate the Sweet and Spicy Carrot Dip until required.

The dip makes a wonderful accompaniment to any cheese or antipasto platter or as a sandwich spread.

Garnish with coriander leaves and a sprinkling of pine nuts and raisons before serving.

Sweet and Spicy Carrot Dip is gluten free and dairy free and is perfect for Vegans. It's a great way of using excess carrots you may have lying around in the refrigerator.
