1 cup grated carrot
3/4 cup grated sweet potato
1 cup cooked white rice
2 spring onions finely sliced
1 cup milk
3/4 cup breadcrumbs
1/4 teaspoon ground nutmeg
1/4 teaspoon ground white pepper
1 tablespoon brown sugar
1 tablespoon melted butter
2 tablespoons fresh parsley and salt to taste
Grease a 20 cm round baking dish or similar and preheat the oven to 170 degrees.
Combine the carrot, sweet potato, spring onion, parsley and rice. Spread evenly into the baking dish.
In a separate bowl or jug, whisk the egg, milk, nutmeg, sugar, pepper, and salt. Pour over the vegetable and rice mixture.
Combine the breadcrumbs and butter and sprinkle over the top.
Place in the oven and bake for 40 minutes, until set and golden. Cover if it starts to become too brown.
