Sweet Potato and Avocado Salad

A simple lunch idea or a perfect accompaniment to a dinner dish.

Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: 4 servings

1kg of sweet potato, peeled and diced into 3cm pieces
3 tbsps of olive oil, extra virgin
2 garlic cloves, crushed
1 bunch asparagus, woody ends trimmed, diagonally cut into 5cm lengths
100g snow peas, trimmed
4 rashers of bacon, diced
2 tbsps of red wine vinegar
1 tbsp of wholegrain mustard
1 ripe avocado, halved, stone removed and diced
40g baby rocket leaves

Preheat oven to 220C. Combine sweet potato, 1 tbsp of olive oil and the garlic in a large roasting pan.
Bake in preheated oven, turning occasionally, for 25 minutes or until golden brown and tender
Meanwhile, cook the asparagus and snow peas in a saucepan of boiling water for 2 minutes or until bright green and tender crisp. Drain well and rinse under cold water to stop cooking.
Cook bacon in frypan, until slightly crispy.
Whisk together the remaining oil (2 tbsps), red wine vinegar and wholegrain mustard in a small bowl.
Once sweet potato is cooked, place in a large serving bowl with asparagus, snow peas, avocado and rocket. Drizzle with dressing and gently toss until just combined.
