Sweet Potato Egg Bake

A very quick and easy way to use up leftover ingredients while providing a warming and filling breakfast. It makes a great change from from a soft boiled egg and soldiers.

Preparation Time: 10 minutes
Cooking Time: 12-15 minutes
Makes: 2 servings

Ingredients
2 eggs
1 small sweet potato
3 tsp hot mango chutney

Method

Pre-heat the oven to 180 ༠C/ 160 ༠C fan/375 ༠F/5 Gas.

Chop the sweet potato and divide between two ramekins.

Lightly beat the eggs with a fork and then stir in one teaspoon of chutney.
Pour half the mixture into each ramekin.

Dollop one teaspoon of chutney on top of each mixture.

Bake in the oven for 12-15 minutes.
