Sweet Potato & Kale Pilaf

This pilaf is made distinct by its ingenious mixture of flavours and textures. The sweetness of the potato paired with the bitter tang of kale combine famously with the selected spices. You also get a satisfying crunch from the almonds amongst the tenderness of the quinoa and remaining ingredients.



Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 6 servings

Ingredients
1 tbsp olive oil
1 brown onion, finely chopped
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground turmeric
1 large sweet potato, peeled, sliced finely
1 cup quinoa
1 1/2 cups vegetable stock
1 bunch kale, stems removed, shredded
1/2 cup slivered almonds
1 bunch coriander leaves, roughly chopped

Method
Using a large saucepan, heat the oil until warmed and add the onion. Cook until softened and then add the cumin, ground coriander and turmeric; stirring until aromatic.

Add the sweet potato and stir through.

Transfer the quinoa and vegetable stock to the pan and bring to the boil. Then reduce heat and leave to simmer for about 15 mins or until quinoa is just tender.

Stir through the kale and continue to cook for 2-3 mins until kale just wilting. Remove from heat and sprinkle the slivered almonds and coriander leaves atop the pilaf.

Serve and savour either warmed or cool!
