Sweet Potato Mousse

Sweet potato is a root tuber with a delicious natural sweetness. It is not used regularly in desserts but this creamy delicious sweet potato mousse will change your view of the sweet potato.

Preparation Time: 1 1/2 hours
Cooking Time: 2-4 hours
Makes: 6-8 servings

5 tsp gelatine
2 eggs, separated
1/4 cup sugar
1 cup milk, hot
1/2 cup sweet potato crushed
1/2 cup whipping cream
2 tsp vanilla

1 cup cake or cookies for base

1/4 cup caramel sauce

Sweet potato crisps
1 small sweet potato
oil for frying
sugar for dusting
1/8 tsp cinnamon
pinch of salt


Bloom gelatin in about a quarter cup of water.

Cream egg yolks with sugar in a bowl till almost white.
Whisk in the milk which was warmed.
Whisk mixture in pan over double boiler until mixture coats the back of a spoon.
(It can also be done in a heavy bottom pan)

Remove from heat;cool to warm. Add vanilla.
Add gelatine and stir to dissolve
Fold in mashed sweet potato. Allow to cool.

Whip egg whites till stiff peaks form.
Fold in the whites into the mixture.
Fold in the beaten cream.

Using a circle mold, place on a cookie sheet lined with parchment or plastic.
Crush cookies and mix with 1/4 tsp cinnamon
Press cookies/ cake in the bottom for 2 cm base.
Pour the mixture into the mold.
Set for 2-3 hours
Decoratively pour caramel sauce
on to serving plate.
Shake or run warm knife and turn out on serving plate.
Decorate with Sweet potato crisps

Sweet Potato Crisps
Cut potato into 3mm thin slices.
Fry in hot oil till crisp and light brown. Drain
Toss with sugar, cinnamon and salt
