These simple patties are a delicious way to serve sweet potato (kumera) and vegetarians will especially love them. I served them with a lemon/yogurt dressing and a fresh Asian inspired side salad. These would also make a great vegetarian addition to any barbecue or outdoor picnic.
Thanks for the recipe. I added 1 cup of gluten free flour. I rolled in breadcrumbs )also gluten free) before frying in virgin olive oil. I had no mint for the sauce but used dill instead. Great vegetarian entree. Yumm !
