Sweet Potato & Pea Falafel

These sweet little nuggets are not only delightfully colourful, but also packed full of punchy flavours and spice.

They are an interesting take on the standard falafel mix, but all the while still living up to the satisfying "cuteness" of the original. Give them a go!



Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 4 servings

Ingredients
1 large sweet potato, quartered, sliced
3 tbsp olive / coconut oil
250g peas
1 1/2 tsp ground coriander
1 1/2 tsp ground cumin
1 1/2 tsp coriander seeds
3 tbsp parsley leaves, roughly chopped

Method
Preheat oven to 180C.

Place chopped sweet potato in a microwaveable dish with 2 tbsp water, and microwave on high until deep orange and just soft. Set aside to cool.

In a food processor, blitz the peas, coriander (ground and seeds), cumin, and parsley, until finely chopped.

Add the cooled sweet potato to the mixture, and process again until well combined.

Roll the mixture into 16 small falafel sized balls, and spread across a lined baking tray. Drizzle a little olive or coconut oil over, and bake for 15-20 minutes, or until golden and cooked through.

Leave to cool for 5 minutes, and then serve rolled up in a wrap with salad, mixed through a pasta dish, or enjoyed as a quick snack.
