This is a simple, healthy recipe for tabouli that uses couscous instead of cracked wheat. It makes a great side (especially with chicken or lamb) and is also a delicious addition to sandwiches and rolls.
Preparation Time: 15-20 minutes
Makes: 4 servings
Ingredients 1 bunch parsley
A handful mint leaves
1/3 cup cooked couscous
Tbls white vinegar
Tbls olive oil (add more if desired)
Juice of one lemon
Pepper, to taste
Prepare the couscous and leave aside to cool.
Prepare the other ingredients: roughly chop the parsley and mint into quite small pieces, finely dice the tomato and thinly slice and then roughly chop the shallots.
Place these ingredients in a large bowl. Add the couscous, the vinegar, the oil, the lemon juice and a dash of pepper. Mix and transfer to a serving bowl.
