Tahini Drizzled Roasted Sweet Potato

I will admit to being slightly addicted to tahini - but I have reasons for being so! It is a super versatile seed butter that can be used in dressings, sauces, or simply by itself. It is also full of calcium and protein, making it an easy way to hit your recommended daily intake of these both.



This filling vegetarian meal feels like naughty comfort food - perfect for a lazy night in - but in reality it is a healthy and quick meal that just happens to be delicious!

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 1 servings

Ingredients
1 small sweet potato
2 tbsp tahini
2 tbsp mixed seeds (used chia, pumpkin, sesame and sunflower)
1 cup spinach, rocket or mixed leaves

Method
Microwave sweet potato with 1 tbsp water for 3 minutes on high.
Transfer sweet potato to a lined baking tray, and oven roast for 20 minutes, or until softened and crispy.

To serve, place roasted sweet potato on a bed of spinach (rocket or mixed leaves can also be used), drizzle with tahini and sprinkle mixed seeds over.
