Zoats are the latest and greatest go-to healthy breakfast. A clever way to sneak more veg and fibre into your day, zoats refer to mixing grated zucchini in with your porridge oats for breakfast - or really any meal of the day!
You won't find the taste to be any different, so flavour and dress your porridge as desired.
Cooking Time: 10 minutes
Ingredients 1/2 cup (50g) oats
1 cup zucchini. grated
1 cup (250ml) almond milk (or other non-dairy milk)
1/2 tsp ground ginger
Pinch Pink Himalayan Salt
1 tbsp tahini, heaped
Place oats, zucchini, milk, ginger and salt in a medium saucepan. Bring to a gentle boil, then reduce to a simmer, stirring consistently for 5-7 mins.
If you want a thicker texture, leave over a low heat for a few minutes longer, otherwise remove from heat and spoon into a serving bowl.
Mix with a pinch of turmeric for a vibrant yellow colour!
Stir well before topping with a generous dollop of tahini.
