Tandoori Chicken Burgers

These chicken burgers are quite unusual for a burger, and are great for the whole family, or change the quantities for less.

Preparation Time: 35 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
4 chicken thigh fillets, trimmed (500g)
2 tblsp Tandoori Paste
4 wholegrain rolls, split
200g tub Tzatziki
1/4 cup coriander leaves
Baby cos lettuce
2 tomatoes, sliced
1/2 small red onion, thinly sliced
1 Lebanese cucumber, cut into thin ribbons
(use a vegetable peeler)

Method
Make 2 long cuts in the thickest part of each thigh fillet.

Combine Tandoori paste and yoghurt in a bowl.

Add chicken and stir to combine. Cover and refrigerate for at least 30 minutes.

Meanwhile grill the top of the rolls, and cut up the salad.

Preheat a bbq or grill, and cook chicken over a medium heat for about 5 minutes each side, or until cooked through.

Spread the base of each roll with tzatziki and top with coriander, lettuce leaves, tomatoes, red onion, and cucumber.

Add the cooked chicken, spread the top of each roll with the mango chutney, and put top part of roll on top to make the hamburger.

No need to serve anything else with it as it has salad already in it. A healthier alternative to a bought burger.
