Taro, Spinach & Crab Sticks Soup

A quick & easy soup of spinach, yam & crab sticks makes a great winter warmer light lunch or dinner.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
a big bunch of spinach, trimmed
100g yam, peeled
4 frozen crab sticks
500ml vegetable stock
white pepper powder, to taste

Method
Wash the spinach under cold running tap thoroughly to get rid all the dirts and sands. Drain.

Cut the yam into sticks. Wash with cold water and drain.

Bring the stock to the boil, add in the yam and cook for 5 minutes until almost tender.

Add in the spinach and crab sticks. Cook for a further 2-3 minutes more until crab sticks are warm through and spinach just wilted. Season with pepper.

Divide among bowls and serve immediately.
