Ingredients 2 1/2 cups uncooked white rice, cooked and cooled
2 eggs, whisked
100 g bacon, diced
1/2 onion, diced
1 carrot, sliced or diced
1/2 cup peas and/or corn
1-2 cups mixed vegetables
2-3 tbs soy sauce
oil for frying
In a large frying pan or wok, heat the oil to a medium heat. Pour the egg into a pan and spread it around like a very thin omelette. Once the egg is cooked, roll the egg up like a cigar and remove it from the pan. Set aside.
Add the bacon and vegetables to the pan and cook, stirring, for 5 minutes until lightly cooked.
Add the rice to the pan and cook for 5 minutes, stirring occasionally, until the rice is heated through.
Add the soy sauce to the pan and mix until well combined.
Slice the egg finely and add it to the pan. Mix thoroughly.
