Ingredients 1 turkey hindquarter (approx 2.6kg)
3 large potatoes
4 large carrots
1 large sweet potato
6 pieces pumpkin
3-4 cloves garlic
1 tbs oil
salt and pepper
Preheat oven to 180C.
Place the turkey hindquarter into a large baking dish and cover with aluminium foil. Bake for 60 minutes, before uncovering it and basting it with its own juices.
Leave the turkey uncovered and cook for another 60 minutes. Please check the juices run clear or check the meat is cooked with a meat thermometer before serving. If the turkey is not cooked, return it to the oven and check it every 15 minutes.
Meanwhile, prepare the vegetables by peeling the carrots and potatoes and chopping them into large chunks.
Place the vegetables and garlic cloves into a baking dish and drizzle with a little bit of oil. Season the vegetables with salt and pepper.
Bake for 45 minutes, turning them after 30 minutes.
Slice the turkey and serve it with an assortment of vegetables.
