Tender Veal Schnitzel With Grapefruit And Baked Potato

Schnitzel is a European cut and therefore I saw my Mother make this at a very early age.

One of the secrets of tender schnitzel is the quality of the veal, and this one was excellent being from one of the best butchers in Perth, and being organic.

The other secret is not to cook it for more than about a minute or two on each side.

Preparation Time: 20 minutes
Cooking Time: 5 minutes plus baked potato
Makes: 2 - 3 servings

Ingredients
3 pieces of baby veal, cut very fine
1 cup breadcrumbs
1 egg
1 grapefruit, cut and scooped
1 or more baked potatoes
Sour cream (optional)
Cottage cheese (optional)

Method
Place the baked potato in silver foil which has been lightly sprayed, and bake for about 45 minutes in a hot oven.

Pound each piece of meat with a rolling pin or meat cleaver.

Beat the egg and dip each piece of meat thoroughly and then leave this in the fridge while the potato cooks.

When the potato is almost done, open the silver foil to let the potato brown for another 15 - 20 minutes.

Just before this is finished, put the breadcrumbs on a plate and dip each piece into the bread crumbs.

Heat some oil in a frypan and cook quickly till starting to brown on both sides -this should take no more than about 1-2 minutes -DO NOT OVERCOOK.

Serve the baked potato with sour cream and/or cottage cheese, and serve with the grapefruit segments in the shell, and a wedge of lemon for the schnitzel.

It is also nice on sandwiches the next day.
