Tennessee Whiskey Fajitas

I was looking for a way to make some vegetarian fajitas a bit more interesting. Jack Daniel's Tennessee Whiskey is perfect: it adds a hint of sweetness that offset the spices I used perfectly.



Tennessee whiskey fajitas


Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 8 small fajitas

Ingredients
2 onions
1 red pepper
1 orange pepper
1 tbsp vegetable oil
1 packet of fajita spice mix
2/3 cup Jack Daniel's whiskey
100g grated cheddar cheese
2/3 cup soured cream
1/3 cup guacamole
8 fajitas

Method
Heat the vegetable oil in a large, heavy-bottomed frying pan.
Thinly slice the onion and peppers.
Fry the onion, pepper, and fajita spice mix for about 5 minutes over a low to medium heat.
Turn the heat up and add the Jack Daniel's - cook until the whiskey is reduced to a syrupy sauce coating the vegetables.

Spoon the vegetables onto a fajita
Sprinkle with grated cheese and a dollop of sour cream and guacamole.

Roll up and serve. This goes perfectly with my Chilli-roasted Sweet Potatoes
