Thai Candied Cassava Dessert

A Thai dessert of gently poached cassava in sugar syrup, served with coconut milk.



Preparation Time: 5 minutes
Cooking Time: 2 hours
Makes: 6 servings

Ingredients
500g cassava
2 cups sugar
1 litre water
1 cup coconut milk, to serve

Method
Peel the cassava and cut into 2-cm chunks. Rinse in cold water.



Place the water and sugar in a saucepan, heat until syrup almost boiling.



Add in the cassava, turn the heat to low and cook for 2 hours until cassava is soft, slightly transparent and syrup has evaporated.



Divide among serving plates, drizzle with coconut milk and serve.
