Thai Chicken and Cashew Stir Fry
This Thai Chicken And Cashew Stir Fry is a hit with the family


This Thai And Cashew Stir Fry is a hit with the family. The crisp stir fried vegetables complement the tender chicken and the cashews give a nice crunch. The combination of fish and oyster sauce give this dish a delicious Thai flavour. Serve with jasmine rice by itself for dinner or as a part of a Thai banquet, your family and friends will be satisfied. Enjoy.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves 4

Ingredients
1 tablespoon fish sauce
2 tablespoons oyster sauce
4 tablespoons chicken stock
1 teaspoon raw sugar or palm sugar
2 tablespoons vegetable oil
4 garlic cloves, finely cut
1 dried chilli, finely cut
3 chicken breasts, cut into strips
1 carrot, cut
1 celery stalk, cut
1 red capsicum, sliced into long ribbons
3/4 cup cashews
White pepper, to season

Method
Combine the fish sauce, oyster sauce, chicken stock and sugar. Stir until the sugar is dissolved and set aside.
Add 1 tablespoon of vegetable oil into a fry pan. Heat on high for 1 minute.
Stir fry cashews for 2 minutes, until slightly brown. Set aside on paper towel to drain any excess oil.

Cashews give the dish a nice crunch.


Stir fry 1 clove of garlic and 1/2 of cut chilli for 1 minute.
Add 1/2 chopped chicken breast and stir fry until the meat turns white. Set aside.
Stir fry 1 clove of garlic and remaining cut chilli for 1 minute. Add the rest of the chopped chicken breast and stir fry until the meat turns white. Set aside with the other cooked chicken.
Add remaining oil and stir fry 2 cloves of garlic for 1 minute.
Add celery and stir fry for 1 minute.
Add capsicum and stir fry for 1 minute.

Cut the capsicum in strips for a good crunch


Add carrot and stir fry for 1 minute.

Stir frying the vegetables at a high heat will help them maintain their crunch and colour.


Add chicken, cashews and sauce to vegetables, stir frying for 1 minute until the chicken is warmed through.



Stir fry chicken and vegetables with sauce
The smell of all the combined ingredients is moorish


Season with white pepper to taste and serve with jasmine rice.
