Thai Green Curry with Chicken

Thai is my favourite take away food and green curry is always a stample in our order. Now you can make it home for a fraction of the cost.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 5 servings

Ingredients
Green curry paste:
3 green chillis
1 tbs lemon grass, crushed
1 tbs ginger, crushed
1 heaped tsp crushed garlic
1 small onion
1 tsp cumin, ground
1 tsp coriander, ground
2 tbs lime juice
tsp fish sauce

400ml coconut milk
1kg chicken breast
1 can of bamboo shoots
2 tbs fish sauce
1 tbs brown sugar
1 cooked rice


Method
Put all the paste ingredients into a blender and process to a paste.

Pour in of the coconut milk into the wok, stir in the paste and bring to the simmer.

Add the bamboo shoots, fish sauce, sugar and chicken.
Simmer until the chicken is cooked.

Before serving add the remaining coconut milk and heat through.
Serve on a bed of boiled rice.
