Thai Pandan Chicken

Try this Thai Pandan Chicken and you won't be able to resist the exotic aroma of infused pandan.



Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 6 servings

Ingredients
1 kg chicken thigh fillet, diced
8 shallots
5 garlic
1 lemongrass (white part only)
1 tsp ground corriander
1 tsp ground tumeric
2 red chillies
2 tbsp fish sauce
2 tsp salt
1 tbsp sugar
1 tbsp cornflour
1/3 cup thick coconut milk
20 pandan leaves (or more)
toothpick
oil to fry

Method
Dice the chicken roughly about 5 x 3cm.

Combine and blend the next 10 ingredients (up to cornflour).

Combine the chicken with the blended herbs, marinate for at least 1 hour.

Pour coconut milk and mix well.

Wrap 2 pieces of chicken with pandan leave, secure with toothpick.

notes: as long as most of the chicken is covered it is ok
Fry in oil for 5- 6 minutes or bake in the oven, wrapped with foil.
