Thai Seafood Rice Noodle Soup

This light and refreshing noodle soup makes a delicious lunch or dinner for seafood lover.



Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
1L chicken stock
3 bird’s eye chillies, seeds removed, finely chopped
¼ cup lemon juice
1 tbsp fish sauce
1 tsp brown sugar
600g fresh seafood
250g pre-cooked rice noodles
2 bunches baby bok choy
¼ cup chopped coriander
1 tsp sesame oil

Method
Combine chicken stock, chillies, lemon juice, fish sauce and brown sugar in a stockpot. Bring to the boil and cook for 10 minutes.



Peel and devein the prawns. Cut the fish into bite-sized pieces. Score the squid and cut to bite-sized pieces.

Add rice noodles & bok choy to stock. Cook for 5 minutes.



Add in seafood and cook for a further 5 minutes.



Divide noodles, bok choy and seafood between 4 servings bowls. Ladle hot stock over seafood. Garnish with coriander and drizzle with sesame oil.
