Ingredients 100 g spaghetti or noodles
2 tbsp soy sauce
4 tbsp smooth peanut butter
1 tbsp vinegar - I used rice wine vinegar
½ tbsp sesame oil
1 tbsp hot sauce
1 cup coleslaw (shredded carrot, cabbage etc)
½ cup fresh bean sprouts
½ red capsicum, chopped
2 spring onions, chopped
Boil the spaghetti as per packet instructions, and then plunge in cold water to stop it cooking further.
In a large bowl, mix the peanut butter (first melted in the microwave), vinegar, a bit of oil, sesame oil and the hot sauce.
Add the drained noodles and mix the sauce through them.
Add the coleslaw, bean sprouts and red capsicum and mix until all ingredients are coated with the sauce.
Sprinkle with the spring onions, or mix these into the rest of the salad.
