The Not-A-Pudding Spicy Christmas Cupcakes

This is a kid-friendly variation on spicy Christmas cupcakes. The kid-friendly comes from the fact I have switched the fruit mince filling for choc-chips.

I have upped the spice to give it quite a kick, but you can halve the quantities if you prefer.

A little bit spicy like a pudding but full of choc-chips


Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 18 servings

Christmas spices: cinnamon, nutmeg and ginger


Ingredients
cup brown sugar
cup self-raising flour
cup plain flour
teaspoon bicarbonate of soda
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1 teaspoon nutmeg
90g softened butter or margarine
1 egg
cup buttermilk
2 tablespoons golden syrup
cup choc chips

Method
Preheat oven to 180C or 160C if fan-forced. Line 18 patty holes with Christmas cases (if you have them).
Into a medium bowl sift the flours, spices and bicarb. *Add the sugar and stir to break up any lumps.
You just throw everything in the bowl together

Add the egg, butter, buttermilk and golden syrup and using an electric beater beat on a low speed until all the ingredients are combined. Increase the speed to medium and beat for a couple of minutes until everything is pale and the colour is nice and pale.
The secret ingedient: use any combination of chocolate you prefer

Add the chocolate chips and stir to combine. Divide the mixture amongst the paper cases and smooth the tops.
If you like eating cake batter, this tastes a lot like eggnog

Bake for about 15-20 minutes or until a light golden brown. Turn onto a wire rack to cool.
To decorate you can dust with icing sugar, add some edible Christmas decorations, make some holly out of cherries and spearmint leaf lollies or pipe a mound of white butter icing and top with a cherry.
