Three Cheese Spaghetti Squash Bake

This is a delicious low-carb alternative to a pasta bake. Spaghetti squash is an incredible vegetable that, when cooked, forms strands that resemble spaghetti. It takes a bit of time to make this dish but it is so worth the effort. I used purple kale in this bake, but you could use any type of kale, or even spinach or silverbeet (or something entirely different!) if you prefer.

There's a lot of cheese in this recipe, so if you'd rather limit the cheese intake, try halving it - it should still be just as delicious.

Preparation Time: 5 minutes
Cooking Time: 65 minutes
Serves: 4

Ingredients
2 spaghetti squash
1 tbsp olive oil
4 garlic cloves
1 bunch kale
250g cheddar
150g parmesan
450g mozzarella
1/2 bunch chives

Method
Preheat the oven to 200C (400F). Pierce the spaghetti squashes with a fork about five times each and place in the microwave on high for a minute.
Cut the squashes in half. Using a spoon, scoop out the seeds and discard. Place the halves face down on a lined baking tray and place in the oven for 45 minutes or until the flesh is soft.
Meanwhile, finely dice the garlic and cut the kale off the rib and into small pieces.
Heat the oil in a large frying pan over low-medium heat. Add the garlic for a few minutes, then add the kale for a few more minutes, or until wilted. Leave the pan to the side.
Grate the cheese, leaving 1/3 of the mozzarella to the side. Finely chop the chives and place in a large bowl with the cheese. Mix well.
When the squash is ready, remove from the oven. Carefully pull out the "spaghetti" flesh using a fork. If you grate the flesh with a fork, strands will form.
Add the "spaghetti" to the large bowl and mix well with the cheese.
Spoon the mixture back into the squash shells and top with the remaining mozzarella.

Place in the oven for 20 minutes, or until the mozzarella starts to turn golden.
