This is a delicious low-carb alternative to a pasta bake. Spaghetti squash is an incredible vegetable that, when cooked, forms strands that resemble spaghetti. It takes a bit of time to make this dish but it is so worth the effort. I used purple kale in this bake, but you could use any type of kale, or even spinach or silverbeet (or something entirely different!) if you prefer.
There's a lot of cheese in this recipe, so if you'd rather limit the cheese intake, try halving it - it should still be just as delicious.
