Three Fruit Yoghurt Muffins

These fruity muffins are great for breakfast on the go, school lunchboxes or a treat for yourself. They are easy to make and you can change the fruit variety to suit your preferences.


Preparation Time: 10 minutes
Cooking Time: 20-25 minutes
Makes: 12

Ingredients
2 1/2 cups SR flour
1 tsp ground cinnamon
1/2 cup brown sugar
2 bananas, mashed
1 tsp vanilla essence
1 egg, lightly beaten
1 3/4 cups yoghurt (plain or flavoured)
1/4 cup vegetable oil
1/2 cup diced strawberries
1 plum, diced

Method
Preheat oven to 190C and line your muffin pan with muffin cases.
In a large bowl combine the flour, cinnamon, sugar, bananas, vanilla, egg, yoghurt and oil. Stir until just combined. Fold in the strawberries and plums.

Divide mixture between the 12 muffin cases and bake for 20-25 minutes.

Rest in pan for 2 minutes before transferring muffins to a wire rack to cool completely.
