Tiramisł meaning 'pick me up' is one of the most well known and popular Italian desserts. Made of sponge fingers dipped in coffee, layered with a whipped mixture of egg yolk, mascarpone cheese and cream. No one can resist this delicious homemade Tiramisł recipe!

Makes: 6 servings
Ingredients
4 tbsp coffee powder
2 cups hot water
1/2 cup marsala wine
2 eggs, separated
1/2 cup caster sugar
250g mascarpone cheese
300ml thickened cream, lightly whipped
30 sponge finger biscuits
cocoa, for dusting
chocolate shavings to serve
Method
In a large dish, dissolve the coffee powder in hot water and set aside to cool.
When cool, pour in the marsala wine and stir to combine.
Beat egg yolks and sugar until pale and thick.
Fold in the mascarpone cheese until combined.
Fold the whipped cream into the cheese mixture and mix gently until just combined.
Beat egg whites until soft peaks form.
Using a large metal spoon, fold the eggwhites into the cheese mixture, set aside.
Cut off about 1 centimetre from one end of the sponge fingers.
Dip the end into the cheese mixture and place around the sides of a cake pan until it surrounds the edge.
Dip sponge fingers into the coffee mixture and cover the base of the cake pan.
Cover the sponge finger base with 1/4 of the mascarpone mixture.
Repeat layers at least 2 more times ending with the cheese mixture.
Cover with plastic wrap and refrigerate for 2 hours.
Dust with cocoa powder and chocolate shavings to serve.
