Toffee & Macadamia Pudding

Another recipe perfect for the cold months ahead. A very sweet dessert that you can prepare for after dinner and serve with your favourite ice-cream flavours or a cup of coffee.

Preparation Time: 10 minutes
Cooking Time: 40 minutes
Makes: 6 servings

Butter to grease
1 1/3 cup self-raising flour
3/4 cup brown sugar
40g butter, melted
2/3 cup milk
1/3 cup mlk
1/3 cup macadamia nuts, chopped
60g caramel lollies
1 cup boiling water

Preheat oven to 160C.
Grease ramekins with extra butter.
Sift flour and mix in half the sugar.

Make a well in the centre and add in the melted butter and milk.

Mix well until smooth.

Cut the caramel lollies in half.
Fold in the macadamia nuts and lollies.

Spread into ramekins until half to three quarters filled.
Sprinkle remaining sugar on top of the mixture.

Pour boiling water over the back of a large spoon over the mixture.

Bake for 40 minutes or until a skewer inserted comes out clean.

Allow it to rest for 3 minutes.
Invert on a plate and serve with ice-cream.
