Toffee Apple Pudding

toffee apple pudding


An indulgent pudding fit for big families or very greedy people. Each portion is about 288 calories based on the brands I used.

Preparation Time: 35 minutes
Cooking Time: 1 hours
Makes: 8 servings

Ingredients
1 cooking apple
2 eggs
1 tsp vanilla extract
160g soft dark brown sugar
125g self raising wholemeal flour
45g pecans
120g margarine
300g creme fraiche

Method



Melt the creme fraiche, 60g margarine, 100g sugar, and vanilla extract in a sauce pan, and stir until fully incorporated.



Pour half the toffee sauce into a pudding basin.



Chop the pecans an scatter on top of the sauce.



Cream the margarine with 60g sugar, then beat in the eggs.



Fold in the flour.



Core, peel, and chop the apple, and fold into the mixture.



Pour the mixture into the pudding bowl and seal it with tin foil.
Fill a sauce pan ⅓ of the way up with water and bring to the boil.



Put in the pudding bowl and simmer of an hour and a half.



Tip the pudding out of the bowl.



Reheat the remaining sauce, and pour over the pudding.
