Ingredients 2 courgettes
1 garlic clove
1 yellow pepper
1tsp mixed spice
half a tsp of majoram
half a tsp of sage
250g tofu block
Chop all vegetables and add to a frying pan of olive oil. Leave on a medium heat for 10 minutes
Add the seasoning and leave on a simmer for another 5 minutes
Slice the tofu chunks and add to the pan. Turn to a medium heat and let the tofu brown for 5 minutes. Add the chopped tomatoes and the vegetable stock in half a pint of water and leave to simmer for 20 minutes.
Serve with wholemeal spaghetti, or brown rice, or enjoy alone.
