Tom Yum

This spicy and tangy soup is one of the favourites in Thai restaurants around the world and is also very popular in Thailand itself. Often served with chicken or shrimp, This version has all the flavour and more mushrooms.



Tom Yum, Ready to serve


Preparation Time: 5 minutes
Cooking Time: 3 minutes
Makes: 1 servings

Ingredients
Vegetable stock
Small ½cm piece galangal,
10 thin slices lemongrass
2 Kaffir lime leaves
Straw mushrooms halved
½ ripe tomato in wedges
A pinch of salt
1 tbsp soy sauce
Palm sugar
1tbsp lime juice
3 small chillies crushed
5-6 chunky pieces soft tofu (optional)
Sprig coriander



Tom Yum, Ready to serve


Method
Take 1 ½ cups of vegetable stock and bring to the boil.
Add the rest of the ingredients to warm through.
Add the lime juice after the heat is off and serve the chillies and coriander on top.
