Tomato Egg

Thinking of what to prepare for breakfast? This tomato egg recipe will be the to go menu. It is quick and simple to make. The taste of the tomatoes add a hint of sweetness to the eggs. Try it out!



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
4 eggs, beaten
2 tomatoes, sliced
2 tbsp Shao xin wine
1 tbsp sugar
1 tbsp soy sauce
5 tbsp cooking oil

Method
In a non-stick pan, turn the heat to high and put 2 tablespoons of oil.

Pour about half of the beaten eggs in and stir fry them lightly. Set them aside. Repeat this with the rest of the beaten eggs.



In the same pan, turn to medium heat and put one tablespoon of oil. Add sliced tomatoes, sugar, soy sauce and Shao xin wine. Stir fry the tomatoes until they are soften and well mixed.



Add the cooked tomatoes to the eggs
