True Blue Anzac Biscuits

April 25th marks ANZAC (Australian & New Zealand Army Corps) Day in Australia, the day we honor our soldiers and the day to eat these True Blue Aussie Anzac Biscuits. While you're baking these delicious and healthy treats, take the opportunity to remember the women who baked these biscuits and sent them to their loved ones serving in the trenches in days gone by.

Anzac Biscuits a plenty


Preparation Time: 15 minutes
Cooking Time: 12 minutes
Makes: 20 biscuits approximately

Ingredients ready to mix


Ingredients
1 cup plain flour
1 cup rolled oats
1 cup brown sugar
1 cup desiccated coconut
125 grams butter
2 tablespoons golden syrup
1 teaspoon bi-carbonated soda

Method
Melt together the butter, golden syrup and bi-carbonated soda.

Sift the plain flour into a bowl and add the desiccated coconut, brown sugar, and rolled oats. Mix together well.

Mixture ready to roll


Add the wet ingredients to the dry ingredients.
Roll the mixture into small ball shapes and place in rows on a well greased tray.

Line up the mixture in small balls


Bake in a moderate oven until slightly golden.
Allow to cool. They should be slightly chewy and it will be hard to stop at just one. My tip is to hide them in the pantry.
Enjoy with a cup of Billy Tea, sit back and watch the kangaroos hop by.
