Tuna and Vegetable Pasta Bake

We are always being told of the benefits of eating fish. But getting fish into a fussy family can be tough. It can also be expensive. This is my favourite tuna dish - toddler friendly, enough vegies to be classed as "healthy" but not so much "green stuff" to be considered too healthy for hubby. It's simple and versatile and most people have these ingredients just sitting around.

Preparation Time: 15 minutes
Cooking Time: 15 minutes on the stove top and then 30 - 40 mins in the oven
Makes: 4 servings

Chopped vegies - nice and colourful!

1 small onion, diced
5 button mushrooms, chopped
1/2 teaspoon of fresh rosemary
2 - 3 cups of diced mixed vegies (I used cauliflower, capsicum, carrot, zucchini, pumpkin and yellow grape tomatoes)
1 x 400 gram tin of tomatoes
1 x 400 gram tin of tuna in springwater
1/2 cup of frozen peas
1/2 cup of olives

1/2 packet of spiral pasta, cooked and drained

1/2 cup of breadcrumbs (I used gluten free)
1 cup of grated tasty cheese
2 tablespoons of pine nuts

Pre-heat oven to 180 degrees.

Cook the pasta according to the packet instructions.

Sautee the onion, mushrooms and rosemary in a deep saucepan with a little oil until onion starts to soften.

Stir frying the vegies all together.

Add the mixed vegies and stir fry for a minute or two.

Add the tinned tomatoes and bring to a simmer. Leave to simmer for about 5 minutes.

Add tuna, peas and olives and simmer for a further minute or two.

Pasta into the baking dish

Put the past into a baking dish and top with the tuna and tomato sauce.

Sauce on the pasta.

In a small bowl mix the breadcrumbs, cheese and pine nuts. Then sprinkle over the top of the pasta and sauce.

And all covered in cheese, breadcrumbs and pine nuts.

Bake in the oven for about 30 - 40 minutes.

If you use gluten free pasta and breadcrumbs then this is a simple gluten free dish.

Use whatever vegies are in season in your garden or good value for money at the markets.

This would be lovely served with fresh basil leaves.

It's also really nice with about 1/4 cup of red wine.
