Tuna Spinach Mornay Pie with Celeriac and Potato Mash

Spinach, Tuna Mornay

This is a family dish, and a good way to get children to eat vegetables. If need be, cut them up very small so they do not know what it is.

The taste is excellent and most ingredients are healthy.

Preparation Time: 25 minutes
Cooking Time: 30 minutes
Makes: 5 servings

50 g butter
1 medium onion, sliced thinly
cup plain flour
2 cups milk
150 g baby spinach leaves
425 g can tuna in springwater, drained
2 tbsp lemon juice
Mushrooms (optional)

400 g potatoes
350 g celeriac
2 tbsp milk
30 g butter
cup grated Parmesan cheese

Boil the celeriac pieces for about 20 minutes, and while this is cooking, boil the potatoes until done.

Mash with milk and butter until smooth. I used a Bamix -see link on review

Bamix the mash

Stir in cheese, and cover to keep warm.

Melt butter in a wok or saucepan, and cook the chopped onion for about 5 minutes.

Add the flour, cook stirring until the mixture thickens. Gradually add the milk and stir till mixture thickens and boils.

Making the mornay

Remove from the heat and add the spinach, tuna and lemon juice.

Adding ingredients

Stir all these together.

Preheat the grill.

Spoon the tuna mixture into a shallow dish - around 2 litres, and top with mushrooms if using.

Add the mash on top.

I also added a bit more cheese on top

Grill until lightly browned.
