Ingredients 2 cups good quality ice cream, very soft
1 1/2 cups self raising flour
1 cup nuts, dried or fresh fruit, cut in small pieces
spices and flavouring to taste
The flavours your need will depend on the ice cream flavour
Preheat oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with baking spray.
In large bowl, stir ice cream until smooth. Stir in flour until just blended; fold in fruit or nut. Transfer to prepared pan. Bake 42 to 48 minutes or until toothpick inserted in center comes out clean.
Cool on wire rack for 10 minutes, then invert loaf onto cooling rack. Serve warm or cool completely .
I tried this one today and found that the 'dough' was very dry and didn't come together. I added some more ice cream so it would bind but the end result was like a dry gluey cake. What did I do wrong? Should it have stayed like a dry crumbly mix in the start?
